Ginger,
The truffle cheese is very tasty, indeed, and I'm sure that it finds some creative applications in your kitchen! Maybe it will make its way into a rich, gluten-free dish made with some of that gorgeous pork recently featured on your blog. Happy Holidays!

Hi Jim, thanks for visiting my little corner of cyberspace! It's reassuring to know that others struggled with this recipe, too-- I wonder if anyone wrote the editor about it. By the way, the new format of the NECS site (http://www.cheesemaking.com) looks great!

At your 201 workshop last weekend, did you try the Cheddar or toma that we made last spring? I'd love to hear about it (tasting would be preferable, but alas! we've relocated). Take care, Jim!

Danielle ... I am happy to see the red flags go up here but also very happy to see the follow through in spite of it all to see just what happens ... it just goes to show that you really have to follow through yourself on what you read .. When I read this recipe I said to myself "...ohboy self, here come the questions..." I have gotten dozens of questions on our site about this recipe not working out as ricotta due to the rennet addition ... seems that the folks at "Saveur" do have blind faith in their writers and pass this through to their readers.

The "fragrance" in the shop must have been heavenly! :)
I can't believe they had Taupinière! Did you get the chance to taste it? I can't get it down here. Will have to either travel to the Loire or Paris to find some more.
I've tagged you for a fun meme if you want to join in.

p.s. I thought I commented on this post right after I read it last week...must have thought about it then forgot to do it.

Shaula,
Sorry to see that you'd just left Brattleboro, VT; we could have tasted cheese together at the Co-op! Looking forward to keeping up with your Mini Cooper road trip on your blog-- hope you find some tasty cheese along the way!

Jude,
I loved reading your blog, from your advice on baking bread to your latest food discoveries in Chicago. Congrats on being the first person to identify the interior of Hot Doug's! How I miss Doug and his encased meats....

Cool informative post about a cheese I've never tried before... One wedge at a time, I guess.
Love the picture of you at Hot Doug's. It's my favorite restaurant in the world!
